EPL is the business-friendly end of the open source range. The part that matters commercially: what you build on top stays yours.
Pluto, the free edition
Not a cut-down demo. Pluto posts to a real general ledger, carries the low-code platform used to extend it, and runs on your own server with no seat count and no expiry.
The paid editions add depth in the same places rather than a different product. Manufacturing, AURA, document management and business intelligence sit there, and the upgrade is a licence key rather than a re-implementation.

Two things separate this from the rest of the open source shelf, and both matter more the longer you run it.
